Chūō Izakaya, meaning "center tavern," is built on the spirit of connection. Inspired by the proprietors' travels, it brings a uniquely Japanese tavern experience to the heart of Northwest Arkansas.

With a contemporary yet grounded design, the wood-laden interior offers sophisticated warmth. Our live edge river bar and wabi sabi style backbar shelves provide a stage for the talents of our bartenders.

The kitchen presents a Japanese-inspired menu, curated with an emphasis on peak-season flavors and exceptional ingredients—sourced locally and globally with a commitment not just to quality, but to sustainability.

Chef Darwin Beyer

Executive Chef

Chef Beyer is a trained sushi chef whose work is a return to origin—a reconnection with the flavors, memories, and quiet rituals of his Japanese heritage. Born in Yokosuka and shaped by his time in Kobe, he found lasting inspiration in the spirit of the izakaya: more than a place to eat, it is a space for connection—where food, drink, and conversation come together with warmth and intention. Guided by tradition and a modern perspective, Chef Beyer now seeks to recreate that experience—inviting others to slow down, share the table, and feel that same sense of belonging and connection.

With over 15 years of experience in hospitality, Lindsey found her passion for mixology while working at one of the country's top-rated establishments, recognized among the "Best Bars in America." Since then, she has dedicated her career to the art of cocktail design and the creation of inviting, intentional atmospheres. Whether in fast-paced speed bars or through immersive pop-up events, Lindsey combines creativity and precision to craft unique beverages and memorable guest experiences. Lindsey continues to shape hospitality experiences through innovative and intentional design.

Shaun Traxler

Beverage Director

Shaun Traxler is a seasoned hospitality professional with over 22 years of bartending experience. His career has taken him around the globe—from Scotland and France to Mexico, Peru, Canada, and across the United States—shaping a deep and diverse perspective on craft cocktails and service. Shaun's original cocktails have been featured in leading industry publications including Imbibe, Wine Enthusiast, Chilled, Thirsty!, and Punch Drink, as well as in several acclaimed cocktail books. Known for his creativity and global influence, Shaun continues to contribute meaningfully to the world of mixology.
